Do you love Cajun rice? Do you want some of the Cajun flavors without all the calories and carbs, while saving money. Then try this recipe using leftover food to create this Cajun inspired rice recipe. We all have days were we are unable to meal prep fully and need a flavorful meal on the table in under 30 minutes. Or maybe you just haven’t went grocery shopping and need to use the food you have on hand.
Ingredients
- 1 pound ground turkey
- bag of microwave cauliflower rice
- bag of microwave long grain rice
- 1 cup frozen mixed veggies
- Cajun Seasoning to taste
- seasoning to taste if preparing turkey raw ( black pepper, garlic, and onion powder)
- 1 cup of low-sodium chicken broth
- about 2-3 tablespoons of Worcestershire sauce
Optional side: Broccoli
Preparation: Prepare the long grain and cauliflower rice until almost fully cooked according to the microwave directions, you will finish cooking it on the stove. Use leftover ground turkey or prepare it fresh according to the directions. Next, Saute the cup of frozen mixed veggies in a hot skillet on heat for 10 minutes with a tablespoon of olive oil. Once the veggies are finished add the rice bags, Cajun seasoning, and Worcestershire sauce. Let the it cook for 3-5 minutes. Last add the ground turkey, chicken broth, and more Cajun seasoning to taste. That’s all it takes.
Note: You can save on some calories and carbs by using a bag of cauliflower rice or using have the bag of rice. I used leftover ground turkey from the freezer. Or just use green beans instead of mixed veggies. Also, to save more money use stove top rice and rice your own cauliflower.
